You can cover a place of burning wood with drywall?

We just bought our first home and I intend to start a nursery down the stairs. However, there is a brick chimney, which includes most of one wall. The fireplace is wood burning and not use it at all. Can We Rock sheet over it? Includes cap for the hole / chimney? Or is it easier to take a hammer and destroy every brick and stone leaf? Is this something that is easy or not? And what is the approximate cost? Thanks for all the advice and opinions!
